Most roses are edible, if they have not been sprayed with chemicals. Rose petals are the most consumed part but rose buds, and rose hips are often made into a tea. Some roses are explicitly bred for their flavor and culinary uses. One company is releasing a new line of roses bred for their culinary flavor known as “Flavorette roses.” Generally, the more fragrant, the better the taste- which is why heirloom roses are popular among chefs. Modern low-fragrance roses tend to be the least flavorful and can have bitter overtones.
