Guest host Peggy Soup visits with Tim "The Pie Guy" Owens.

Here is Tim's cobbler recipe that was discussed in the show.

Cup a...Cup a....Cup a Fruit Cobbler

1 cup flour
1 Tbl baking powder
1 cup sugar
1 cup milk
1/2 stick butter
Approx 2 cups of fruit....

Pre cook fruit so it is hot when you add it to the batter. Fruit of your choice.
Apples you can season with cinnamon and brown sugar...
Peaches a little vanilla and a little sugar...
Strawberries a bit of sugar to your taste

Preheat oven to 400

Place sliced up 1/2 stick of butter in a glass cake pan and slide it into the oven to melt(it only takes about 5 min - careful not to burn your butter)

Mix dry ingredients with a whisk to get them completely blended together. Add milk and whisk until blended.

Pull your hot pan out of the oven and fold your cake mix into the butter (using a silicone spatula helps make the folding easier)

Using a large soup spoon, drop your hot fruit mix around the cake, spacing each spoonful  1/2 to 1 inch away from the the last drop. You can leave them in drops or do an "S" or figure 8 through the fruit.
You don't want to"mix" the fruit into the cake. The cake will bake up around the fruit.

Place your cup a, cup a, cup a cobbler in the 400 degree oven for about 35-40 min. The cake will bake up around the fruit.

Eating this alone or paired with ice cream is a delightful dessert any time of year.

A native Texan, Jeff was bitten by the Colorado "bug" after graduating from UT-Austin. He arrived in Paonia on the October full moon of 1978, and has been involved with KVNF since its earliest days. His first KVNF show was "Sunday Night Live," which featured live musicians performing in the original Garvin Mesa garage/studio.
