Growing Home - Peppers

Peppers come in a wide variety of colors. Often pepper color is based on their degree of ripeness, turning towards warmer colors as they age. Typically, green bell peppers go from green to yellow, orange or red as they mature. As peppers get more color, they also get more nutritious. Interestingly the least nutritious pepper is a green bell pepper because they’ve spent less time on the vine. This is why green bell peppers cost less than other colored bell peppers. Also pepper color has nothing to do with their heat.
